Sopa de Platano Maduro
A silky Cuban sweet plantain soup balancing natural sweetness with savory aromatic spices and fresh lime.
Ingredients
- 2 tbsp olive oil
- 1 cup yellow onion, chopped
- 4 garlic cloves, minced
- 1/2 tsp ground cumin
- 1 tsp salt
- 1/4 tsp ground black pepper
- 3 ripe sweet plantains, sliced
- 4 cups vegetable broth
- 2 tbsp lime juice

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 cup chopped yellow onion and 4 minced garlic cloves, cooking for 4 minutes until translucent and soft.

Stir in 1/2 tsp ground cumin, 1 tsp salt, and 1/4 tsp ground black pepper, cooking for 1 minute until aromatic.

Add 3 sliced ripe sweet plantains and cook for 5 minutes, stirring occasionally as they soften.

Pour in 4 cups vegetable broth and bring the liquid to a gentle boil.

Reduce heat to low, cover, and simmer for 15 minutes until the plantains are very soft.
