Tamal en Cazuela
A comforting stew of fresh corn puree and tender pork cooked together in an aromatic sofrito base. It offers a thick, savory cornmeal texture with vibrant flavors.
Ingredients
- 2 tbsp olive oil
- 1 lb boneless pork shoulder, cubed
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 4 garlic cloves, minced
- 1/2 cup tomato sauce
- 4 cups fresh corn kernels, pureed
- 2 cups chicken broth
- 1 tsp salt
- 2 tbsp lime juice

Heat 2 tbsp olive oil in a heavy pot over medium heat.

Add 1 lb cubed boneless pork shoulder and sear until browned, about 8 minutes.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 4 minced garlic cloves, cooking until softened, about 5 minutes.

Stir in 1/2 cup tomato sauce, 4 cups pureed fresh corn kernels, 2 cups chicken broth, and 1 tsp salt.

Reduce heat to low, cover, and simmer for 30 minutes until thick and pork reaches an internal temperature of 145°F.
