Sopa de Siete Potencias
A rich Cuban seafood soup brimming with seven varieties of seafood simmered in a savory white wine and tomato soffrito broth.
Ingredients
- 2 tbsp olive oil
- 1 cup yellow onion, diced
- 1 cup green bell pepper, diced
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1/2 cup dry white wine
- 6 cups seafood stock
- 12 littleneck clams, scrubbed
- 12 mussels, scrubbed
- 1/2 lb red snapper fillet, cubed
- 1/2 lb large shrimp, peeled
- 4 oz squid rings, sliced
- 4 oz sea scallops, halved
- 4 oz lump crab meat

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 cup diced yellow onion, 1 cup diced green bell pepper, and 4 minced garlic cloves, sautéing for 5 minutes until soft.

Stir in 2 tbsp tomato paste and cook for 1 minute until fragrant.

Pour in 1/2 cup dry white wine and simmer for 2 minutes to reduce slightly.

Add 6 cups seafood stock and bring the mixture to a boil over high heat, then reduce to medium-low.

Add 12 scrubbed littleneck clams and 12 scrubbed mussels, cover, and simmer for 5 minutes until shells open.

Stir in 1/2 lb cubed red snapper fillet, 1/2 lb peeled large shrimp, 4 oz sliced squid rings, 4 oz halved sea scallops, and 4 oz lump crab meat.

Cook for 4 to 5 minutes until red snapper fillet reaches an internal temperature of 145 degrees F and seafood is opaque.
