Spätzle with Mushroom Cream Sauce
Tender egg noodles in a rich, earthy mushroom and sour cream sauce. A comforting German staple with deep umami flavors.
Ingredients
- 2 cups all-purpose flour
- 4 eggs
- 1/2 cup whole milk
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 3 cups mixed mushrooms (cremini, button, oyster), sliced
- 1/2 cup onion, diced
- 2 garlic cloves, minced
- 2 tbsp unsalted butter
- 1/2 cup sour cream
- 1 cup beef broth
- 1/2 tsp fresh thyme, chopped
- 1/4 tsp salt
- 1/8 tsp black pepper

Bring a large pot of salted water to a boil.

Mix 2 cups all-purpose flour, 4 eggs, 1/2 cup whole milk, and 1/4 tsp salt into a thick, sticky batter.

Using a spätzle maker or colander with large holes, push the batter through into the boiling water. Spätzle will sink then float to the surface.

Once they float and bob on the surface for 1-2 minutes, remove with a slotted spoon to a bowl. Set aside.

For the sauce: melt 2 tbsp unsalted butter in a large skillet over medium-high heat.

Add 3 cups sliced mixed mushrooms (cremini, button, oyster) and sauté for 5-6 minutes until browned and tender, stirring occasionally.

Add 1/2 cup diced onion and 2 minced garlic cloves, cook for 2 minutes until fragrant.

Pour in 1 cup beef broth and 1/2 tsp chopped fresh thyme, bring to a simmer.

Remove from heat and stir in 1/2 cup sour cream slowly, stirring to prevent curdling.

Add cooked spätzle to the sauce and fold gently to combine.

Season to taste with 1/4 tsp salt and 1/8 tsp black pepper.
