Warm German Potato Salad
Tender Yukon Gold potatoes tossed in a warm, tangy bacon dressing with sweet onions and fresh parsley.
Ingredients
- 2 lbs Yukon Gold potatoes, sliced
- 6 slices thick-cut bacon, chopped
- 1 cup yellow onion, diced
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 2 tbsp granulated sugar
- 2 tsp Dijon mustard
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped

Place 2 lbs sliced Yukon Gold potatoes in a large pot, cover with water, and boil for 12 to 15 minutes until fork tender, then drain.

Fry 6 slices chopped thick-cut bacon in a skillet over medium heat until crispy and cooked to 160F internal temperature, then transfer bacon to paper towels and keep drippings in skillet.

Add 1 cup diced yellow onion to the reserved bacon fat and cook for 4 to 5 minutes until soft.

Whisk 1/4 cup apple cider vinegar, 1/4 cup water, 2 tbsp granulated sugar, 2 tsp Dijon mustard, 1 tsp salt, and 1/2 tsp black pepper into the skillet and bring to a simmer.

Fold warm Yukon Gold potatoes and crisp thick-cut bacon into the warm dressing, garnish with 2 tbsp chopped fresh parsley, and serve warm.
