  • 20 oz fresh spinach, chopped
  • 8 oz feta cheese, crumbled
  • 1 cup ricotta cheese
  • 2 large egg
  • 1/2 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp fresh dill, chopped
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 12 phyllo dough sheets, thawed
  • 1/4 cup butter (melted)

    Heat 1 tbsp 1/4 cup butter (melted) in a skillet over medium heat. Saute 1/2 diced yellow onion and 2 minced garlic cloves for 2 minutes until softened.

    Add 20 oz chopped fresh spinach and cook 3-4 minutes until wilted. Let cool slightly.

    In a bowl, combine cooled spinach mixture, 8 oz crumbled feta cheese, 1 cup ricotta cheese, 2 large egg, 1 tbsp chopped fresh dill, 1/4 tsp salt, and 1/8 tsp black pepper. Mix well.

    Brush a 9x13 baking dish with butter. Layer 4 12 thawed phyllo dough sheets sheets, brushing each with butter.

    Spread spinach-feta filling evenly over the phyllo.

    Layer remaining 4-8 phyllo sheets on top, brushing each with butter. Tuck the edges in.

    Score the top into 8 squares. Bake for 30-35 minutes until the phyllo is golden brown.
