Watermelon Feta Salad

Ingredients
- 8 cups seedless watermelon, cut into 1-inch cubes
- 1 English cucumber, diced
- 1 cup feta cheese, crumbled
- 1/2 red onion, thinly sliced
- 1/2 cup fresh mint leaves, chopped
- 1/2 cup kalamata olives (optional), pitted and halved
- 3 tbsp extra virgin olive oil
- 1 lime, juiced
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp black pepper, freshly ground

In a large bowl, combine 8 cups cut into 1-inch cubes seedless watermelon, 1 diced English cucumber, 1/2 thinly sliced red onion, and 1 cup crumbled feta cheese.

If using, add 1/2 cup pitted and halved kalamata olives (optional).

In a small bowl, whisk together 3 tbsp extra virgin olive oil, 1 juiced lime juice, 1 tsp honey, 1/2 tsp salt, and 1/4 tsp freshly ground black pepper to make the dressing.
