Spicy Squid Salad
Parboiled squid tossed with crunchy fresh vegetables in a sweet, spicy, and tangy gochujang dressing.
Ingredients
- 1 lb squid tubes, sliced
- 1 English cucumber, julienned
- 1 carrot, julienned
- 1/2 yellow onion, thinly sliced
- 2 tbsp Korean chili paste
- 2 tsp Korean chili flakes
- 2 tbsp rice vinegar
- 1 tbsp granulated sugar
- 2 garlic cloves, minced
- 2 tsp sesame oil
- 2 tsp sesame seeds, toasted

Bring a pot of water to a rolling boil over high heat.

Blanch 1 lb sliced squid tubes for 1 to 2 minutes until opaque, firm, and internal temperature reaches 145F.

Drain squid tubes and chill in ice water, then pat dry.

In a mixing bowl, combine 2 tbsp Korean chili paste, 2 tsp Korean chili flakes, 2 tbsp rice vinegar, 1 tbsp granulated sugar, 2 minced garlic cloves, and 2 tsp sesame oil.

Add squid tubes, 1 julienned English cucumber, 1 julienned carrot, and 1/2 thinly sliced yellow onion to the bowl and toss thoroughly.

Garnish with 2 tsp toasted sesame seeds and serve chilled.
