Sundubu Jjigae
A spicy Korean soft tofu stew simmered with pork, kimchi, and aromatic chili flakes in a rich broth. Served bubbling hot with a fresh egg cracked in right before eating.
Ingredients
- 4 oz pork shoulder, diced
- 1 tbsp toasted sesame oil
- 2 tbsp Korean chili flakes
- 2 tsp garlic, minced
- 1/2 cup napa cabbage kimchi, chopped
- 2 cups kelp and anchovy broth
- 1 tbsp soy sauce
- 11 oz extra soft uncurdled tofu
- 1 egg
- 2 stems green onion, sliced

Heat 1 tbsp toasted sesame oil in a small pot over medium heat.

Add 4 oz diced pork shoulder and 2 tsp minced garlic, cooking for 3 minutes until meat reaches 160°F.

Stir in 2 tbsp Korean chili flakes and 1/2 cup chopped napa cabbage kimchi, sautéing for 1 minute until fragrant chili oil forms.

Pour in 2 cups kelp and anchovy broth and 1 tbsp soy sauce, bringing the broth to a rapid boil.

Add 11 oz extra soft uncurdled tofu in large spoonfuls, simmer for 4 minutes, top with 2 stems sliced green onion, and crack 1 egg into the bubbling pot.
