Ingredients

  • 3 racks pork spareribs (about 3-4 racks)
  • 16 garlic cloves, minced
  • 1/2 cup palm sugar or brown sugar
  • 1/4 cup fish sauce
  • 1/4 cup soy sauce
  • 1 tsp black pepper
  • 1/4 cup vegetable oil
  • 2 tbsp butter
  • 1 cup water
  • 4 stalks green onions, chopped
  • 2 tbsp sesame seeds

Instructions

  1. 1

Preheat oven to 350°F. Pat 3 racks pork spareribs (about 3-4 racks) dry and season with salt and 1 tsp black pepper.

  2. 2

Heat 1/4 cup vegetable oil in a large skillet over medium-high heat. Sear ribs for 2-3 minutes per side until browned. Transfer to a baking dish.

  3. 3

In the same skillet, melt 2 tbsp butter and add 16 minced garlic cloves. Cook for 1-2 minutes until fragrant.

  4. 4

Add 1/2 cup palm sugar or brown sugar, 1/4 cup fish sauce, 1/4 cup soy sauce, and 1 cup water. Stir well and bring to a simmer.

  5. 5

Pour the sauce over ribs in the baking dish. Cover with foil and bake for 45-60 minutes until ribs are tender and meat pulls away from the bone. An internal thermometer should read 190°F.

  6. 6

Remove foil and bake for an additional 15-20 minutes until the sauce becomes sticky and caramelized.

  7. 7

Garnish with 4 stalks chopped green onions and 2 tbsp sesame seeds before serving.

Questions

Can I make Sticky Garlic Spareribs dairy-free?

Yes. The dairy in this entry is 2 tbsp butter. Swap the butter for olive oil where it melts, or a plant-based block butter where it is creamed. The richness shifts slightly, but the method does not change.

Can I make Sticky Garlic Spareribs gluten-free?

Yes. The gluten in this entry is 1/4 cup soy sauce. Swap the soy-based sauce for tamari or coconut aminos. Everything else proceeds as written.

How long does Sticky Garlic Spareribs keep?

Refrigerate leftovers within two hours and eat them within three days. Reheat covered in a 300 F oven until warmed through.

Can I halve or double Sticky Garlic Spareribs?

Yes. As written it serves 4. Every ingredient in this entry carries precomputed half and double quantities, and the app's batch dial rewrites them inside each step. Doubled, split it across two pans and rotate them halfway; one crowded pan bakes unevenly.
