Strawberry Spinach Salad
A beautiful spring salad of baby spinach, fresh strawberries, sliced almonds, and goat cheese tossed with a sweet poppy seed vinaigrette. Sweet, tangy, and perfect for any occasion.
Ingredients
- 6 oz baby spinach
- 1 lb fresh strawberries, hulled and sliced
- 2 oz fresh goat cheese, crumbled
- 1/4 cup sliced almonds, toasted
- 1/4 cup red onion, very thinly sliced
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 2 tsp honey
- 1 tsp poppy seeds
- 1/4 tsp salt

In a small bowl, whisk together 2 tbsp balsamic vinegar, 2 tbsp extra virgin olive oil, 2 tsp honey, 1 tsp poppy seeds, and 1/4 tsp salt.

Place 6 oz baby spinach in a large salad bowl.

Arrange 1 lb hulled and sliced fresh strawberries, 1/4 cup very thinly sliced red onion, and 1/4 cup toasted sliced almonds over the spinach.

Drizzle the vinaigrette over the salad and toss gently.

Sprinkle with 2 oz crumbled fresh goat cheese and serve immediately.
