  • 1/2 tsp black pepper
  • 6 large eggs, beaten
  • 1/2 cup feta cheese (optional), crumbled
  • 1/4 cup fresh parsley, chopped
  • 1 loaf crusty bread (for serving)

Instructions

    Heat the 2 tbsp olive oil in a large skillet over medium heat.

    Add the 1 diced yellow onion and 1 diced green bell pepper and sauté for 5-7 minutes until softened.

    Add the 2 minced garlic cloves and cook for 30 seconds until fragrant.

    Add the 4 diced ripe tomatoes, 1 tsp paprika, 1/2 tsp red pepper flakes (Aleppo or Turkish pul biber if available), 1/2 tsp salt, and 1/2 tsp black pepper. Cook for about 5 minutes, stirring occasionally, until the tomatoes break down and form a sauce.

    Reduce heat to medium-low. Make small wells in the tomato mixture and pour the 6 beaten large eggs into the pan.

    Allow the eggs to set slightly for about 30 seconds, then gently stir and fold them into the tomato mixture. Do not stir vigorously; the eggs should form soft curds mixed with the sauce.

    Cook for another 2-3 minutes until the eggs are just set but still soft and creamy.

    Remove from heat and sprinkle with 1/2 cup crumbled feta cheese (optional) (if using) and 1/4 cup chopped fresh parsley.
