Mercimek Çorbası
A traditional Turkish red lentil soup simmered with vegetables and warm spices, blended until velvety smooth.
Ingredients
- 2 tbsp olive oil
- 1 yellow onion, diced
- 1 carrot, diced
- 1 small russet potato, peeled, diced
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 tsp salt
- 2 tbsp fresh lemon juice
- 1 tsp dried mint

Heat 2 tbsp olive oil in a large soup pot over medium heat.

Add 1 diced yellow onion, 1 diced carrot, and 1 small peeled, diced russet potato, cooking for 5 minutes until softened.

Stir in 2 minced garlic cloves, 1 tbsp tomato paste, and 1 tsp ground cumin, sauteing for 1 minute until fragrant.

Add 1 cup rinsed red lentils, 6 cups vegetable broth, and 1 tsp salt, bringing the mixture to a simmer.

Cover and simmer on low heat for 25 minutes until lentils and vegetables are tender.

Puree the soup with an immersion blender until smooth, then finish by stirring in 2 tbsp fresh lemon juice and 1 tsp dried mint.
