Vegan Buddha Bowl
A nourishing bowl of brown rice, roasted veggies, chickpeas, avocado, and a creamy tahini dressing. Wholesome and satisfying.
Ingredients
- 1 cup brown rice, cooked
- 1/2 cup roasted vegetables, mixed
- 1/2 cup chickpeas, drained
- 1/4 avocado, sliced
- 1/4 cup tahini dressing

In a serving bowl, start by placing 1 cup cooked brown rice as the base layer.

Arrange 1/2 cup roasted vegetables on top of the rice, placing them in one section of the bowl.

Add 1/2 cup drained chickpeas next to the roasted vegetables, creating another section in the bowl.

Fan out 1/4 sliced avocado in another section of the bowl.

Just before serving, drizzle 1/4 cup tahini dressing over all the ingredients.

Optionally, garnish with fresh herbs, microgreens, or a sprinkle of sesame seeds if available.
