Vegetable Quinoa Bowl
A wholesome bowl of quinoa, roasted and fresh vegetables, and a lemon-herb vinaigrette. Bright, filling, and nutritious.
Ingredients
- 1 cup quinoa, cooked
- 1/2 cup roasted vegetables, mixed
- 1/2 cup fresh vegetables, mixed
- 1/4 cup lemon-herb vinaigrette

In a serving bowl, add 1 cup cooked quinoa as the base layer.

Add a layer of 1/2 cup mixed roasted vegetables on top of the quinoa.

Add a layer of 1/2 cup mixed fresh vegetables on top of the roasted vegetables.

Drizzle 1/4 cup lemon-herb vinaigrette over the entire bowl just before serving.

Gently toss all ingredients together if desired, or leave layered for presentation.

Serve immediately, or refrigerate in an airtight container for up to 2 days.
