Ingredients

  • 6 cups ripe watermelon, seedless, cubed
  • 1/2 cup fresh mint leaves
  • 2 tbsp fresh lime juice
  • 2 tbsp honey (or agave nectar for vegan option)
  • 2 cups sparkling water, chilled
  • as needed ice cubes
  • 4 lime slices (for garnish)
  • 4 mint sprigs (for garnish)

Instructions

    Add 6 cups cubed ripe watermelon, seedless to a blender and blend until smooth.

    Reserve a few fresh mint leaves leaves for garnish, then add the remainder of the 1/2 cup fresh mint leaves to the blender with the watermelon purée.

    Add 2 tbsp fresh lime juice and 2 tbsp honey (or agave nectar for vegan option) to the blender.

    Blend again until the mint is finely chopped and incorporated.

    Strain the mixture through a fine-mesh sieve into a pitcher to remove any pulp and mint fragments.

    Chill in the refrigerator for at least 30 minutes.

    When ready to serve, fill glasses with as needed ice cubes.

    Pour the watermelon mixture over the ice, filling the glasses about 3/4 full.
