Bacon-Wrapped Stuffed Dates
Sweet Medjool dates stuffed with a whole almond and wrapped in smoky bacon, then roasted until caramelized and crisp — an irresistible sweet-and-salty paleo appetizer.
Ingredients
- 12 Medjool dates, pitted
- 12 whole roasted almonds
- 6 strips thin-cut bacon, strips halved crosswise
- 1/4 tsp black pepper, freshly ground

Preheat oven to 400°F. Line a rimmed baking sheet with foil or parchment paper and place a wire rack on top.

Stuff each 12 pitted Medjool dates with one whole roasted almonds.

Wrap each stuffed date with one halved strip of 6 strips strips halved crosswise thin-cut bacon and secure with a toothpick.

Arrange wrapped dates on the wire rack. Grind 1/4 tsp freshly ground black pepper over the tops.

Bake for 18 to 20 minutes, turning once halfway through, until the bacon is crisp and caramelized.

Let cool for 2 minutes before serving — the filling will be very hot.
