- 1 red onion, thinly sliced
- 1/2 cup white vinegar
- 1 tbsp sugar
- 8 oz goat cheese, softened
- 4 oz cream cheese, softened
- 2 tbsp olive oil
- 1/4 cup honey
- 1/2 tsp red pepper flakes

Put 1 thinly sliced red onion in a small jar or bowl and pour in 1/2 cup white vinegar and 1 tbsp sugar, then stir and set aside to pickle while you prepare the rest.

In a food processor, blend 8 oz goat cheese, softened, 4 oz cream cheese, softened, and 2 tbsp olive oil for 1 to 2 minutes, stopping to scrape down the sides, until light and airy.
