Ingredients

  • 1 head cauliflower head, cut into florets
  • 2 tbsp harissa paste
  • 2 tbsp olive oil
  • 1 tbsp honey (or maple syrup for vegan option)
  • 2 cloves garlic cloves, minced
  • 1/2 tsp kosher salt
  • 1 tbsp lemon juice
  • 2 tbsp fresh mint leaves, chopped
  • 1/2 cup plain yogurt (optional, omit for vegan)

Instructions

    Preheat your air fryer to 380°F (190°C).

    In a large bowl, mix together 2 tbsp harissa paste, 2 tbsp olive oil, 1 tbsp honey (or maple syrup for vegan option), 2 cloves minced garlic cloves, and 1/2 tsp kosher salt.

    Add 1 head cut into florets cauliflower head to the bowl and toss until they are evenly coated with the harissa mixture.

    Place the cauliflower in a single layer in the air fryer basket. You may need to cook in batches depending on the size of your air fryer.

    Cook for 12-15 minutes, shaking the basket halfway through, until the cauliflower is tender and has crispy edges.

    While the cauliflower is cooking, if using, prepare the yogurt sauce by mixing 1/2 cup plain yogurt (optional, omit for vegan) with a splash of lemon juice and a pinch of salt.
