Ingredients

  • 1 large ripe avocado, pitted, peeled
  • 2 small tomatillo, husked, quartered
  • 1 jalapeno, stemmed, seeded
  • 1/2 cup fresh cilantro leaves and stems
  • 2 tbsp fresh lime juice
  • 1 clove garlic clove, peeled
  • 4 tbsp cold water
  • 1/2 tsp kosher salt

Instructions

    Combine 1 large pitted, peeled ripe avocado, 2 small husked, quartered tomatillo, 1 stemmed, seeded jalapeno, 1/2 cup fresh cilantro leaves and stems, 2 tbsp fresh lime juice, 1 clove peeled garlic clove, 4 tbsp cold water, and 1/2 tsp kosher salt in a blender.

    Blend on high until completely smooth and creamy, about 1 minute. Add more cold water a tablespoon at a time if needed to reach a pourable consistency.

    Taste and adjust seasoning with more kosher salt or fresh lime juice.

    Serve immediately or press plastic wrap directly onto the surface of the crema and refrigerate for up to 2 days to prevent browning.
