Älplermagronen
Alpine pasta with potatoes, cheese, and onions in a comforting one-pot dish. Topped with crispy fried onions and apple sauce on the side.
Ingredients
- 12 oz Elbow pasta
- 1 lb Waxy potatoes, diced small
- 2 medium Yellow onions, sliced
- 8 oz Gruyere cheese, shredded
- 4 tbsp Butter
- 1/2 cup Heavy cream
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 1/2 cup Applesauce (unsweetened)
- 1/2 cup Crispy fried onions

Bring a large pot of salted water to a boil. Add 1 lb diced small Waxy potatoes and cook for 5 minutes.

Add 12 oz Elbow pasta and continue cooking for 8-10 minutes until both are tender.

Drain and set aside.

In the same pot, melt 4 tbsp Butter over medium heat. Add 2 medium sliced Yellow onions and cook until softened and slightly golden, about 5 minutes.

Return the drained pasta and potatoes to the pot.

Reduce heat to low. Stir in 8 oz shredded Gruyere cheese and 1/2 cup Heavy cream until the cheese is melted and creamy.

Season with 1/2 tsp Salt and 1/4 tsp Black pepper to taste.

Serve topped with 1/2 cup Crispy fried onions and a dollop of 1/2 cup Applesauce (unsweetened) on the side.
