Ingredients

  • 1 lb ground beef (80/20)
  • 8 strips bacon strips
  • 4 slices cheddar cheese slices
  • 16 leaves butter lettuce leaves (large outer leaves)
  • 2 medium tomato, sliced
  • 1/2 small red onion, thinly sliced
  • 1/2 cup dill pickle slices
  • 2 tbsp yellow mustard
  • 2 tbsp ketchup
  • 1/2 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper, freshly ground

Instructions

  1. 1

Cook 8 strips bacon strips in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate. Drain most of the fat, leaving a thin film in the pan.

  2. 2

Divide 1 lb ground beef (80/20) into 4 equal patties about 3/4-inch thick. Press a small indent in the center of each. Season both sides with 1/2 tsp kosher salt, 1/4 tsp freshly ground black pepper, and 1/2 tsp garlic powder.

  3. 3

Heat a grill or the reserved skillet over medium-high heat. Cook patties 3-4 minutes per side until they reach an internal temperature of 160°F (71°C). Place 4 slices cheddar cheese slices on each patty during the last minute and cover briefly to melt.

  4. 4

Lay two 16 leaves butter lettuce leaves (large outer leaves) overlapping to form a cup. Place a patty on each cup.

  5. 5

Top each patty with bacon strips (2 strips each), 2 medium sliced tomato, 1/2 small thinly sliced red onion, and 1/2 cup dill pickle slices. Drizzle with 2 tbsp yellow mustard and 2 tbsp ketchup.

  6. 6

Wrap the lettuce around the filling and serve immediately.
