  • 2 lbs boneless skinless chicken breast, cut into 1-in cubes
  • 12 strips bacon strips (sugar-free for Whole30), halved crosswise
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper, freshly ground
  • 1/2 tsp kosher salt
  • 2 tbsp fresh parsley, chopped

    Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper and place a wire rack on top if available.

    In a large bowl, toss 2 lbs cut into 1-in cubes boneless skinless chicken breast with 1/2 tsp garlic powder, 1/2 tsp smoked paprika, 1/2 tsp onion powder, 1/2 tsp kosher salt, and 1/2 tsp freshly ground black pepper until evenly coated.

    Wrap each piece of seasoned chicken with a halved crosswise strip of bacon strips (sugar-free for Whole30), overlapping the ends slightly. Secure with a toothpick and place seam-side down on the rack.

    Bake for 22 to 25 minutes until the bacon is crisp and browned and the chicken reaches an internal temperature of 165°F (74°C). For extra crispiness, broil for the final 2 minutes.
