Banh Mi
A fusion sandwich with crisp baguette, savory pork or chicken, pickled veggies, cucumber, cilantro, and spicy mayo.
Ingredients
- 2 baguette, small
- 4 oz pork, cooked, sliced
- 1/4 cup pickled carrots and daikon
- 1/4 cup cucumber, sliced
- 2 tbsp cilantro leaves
- 2 tbsp spicy mayo
Instructions

Slice the 2 baguette lengthwise, but not all the way through, creating a hinge.

Lightly toast the baguette if desired for extra crispness.

Spread 2 tbsp spicy mayo on both sides of the inside of the baguette.

Layer 4 oz cooked, sliced pork evenly along the bottom half of the baguette.

Add a layer of 1/4 cup pickled carrots and daikon on top of the protein.

Add a layer of 1/4 cup sliced cucumber on top of the pickled vegetables.

Sprinkle 2 tbsp cilantro leaves over the top of all the fillings.

Gently press the sandwich together.

Cut the sandwich in half diagonally if desired for easier eating.

Serve immediately while the bread is still crisp and the fillings are fresh.
