Banh Mi Thit Nuong
A crisp baguette stuffed with savory marinated grilled pork, pickled carrots and daikon, fresh cucumber, and herbs.
Ingredients
- 1.5 lbs pork shoulder, sliced thin
- 2 tbsp lemongrass stalk, minced
- 4 garlic cloves, minced
- 2 tbsp shallot, minced
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 4 Vietnamese baguettes, split open
- 1 cup pickled carrot and daikon, drained
- 1 English cucumber, sliced thin
- 1 cup fresh cilantro sprigs
- 1 jalapeno pepper, sliced thin
- 1/4 cup mayonnaise

In a bowl, combine 2 tbsp minced lemongrass stalk, 4 minced garlic cloves, 2 tbsp minced shallot, 2 tbsp fish sauce, 2 tbsp brown sugar, 1 tbsp soy sauce, and 1 tbsp sesame oil to form a marinade.

Add 1.5 lbs sliced thin pork shoulder to the marinade, toss to coat thoroughly, and refrigerate for at least 1 hour.

Preheat grill to medium-high heat.

Grill 1.5 lbs sliced thin pork shoulder for 3 to 4 minutes per side until charred and internal temperature reaches 145°F.

Warm 4 split open Vietnamese baguettes lightly on the grill until the exterior is crusty.

Spread 1/4 cup mayonnaise inside each warmed baguettes.

Fill sandwiches with cooked pork, 1 sliced thin English cucumber, 1 cup drained pickled carrot and daikon, 1 sliced thin jalapeno pepper, and 1 cup fresh cilantro sprigs.
