Beef Soup
A rich, slow-simmered Caribbean soup loaded with tender beef shank, yellow yam, calabaza squash, and aromatic herbs.
Ingredients
- 2 lbs beef shank, cubed
- 1 tbsp vegetable oil
- 8 cups water
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 6 pimento berries, crushed
- 1 lb calabaza squash, chopped
- 1 lb yellow yam, cubed
- 2 carrots, sliced
- 4 scallions, chopped
- 4 fresh thyme sprigs
- 1 scotch bonnet pepper, whole
- 1 tsp salt

Heat 1 tbsp vegetable oil in a large soup pot over medium-high heat.

Add 2 lbs cubed beef shank and brown on all sides for 8 to 10 minutes.

Pour in 8 cups water along with 1 chopped yellow onion, 4 minced garlic cloves, and 6 crushed pimento berries, bringing the pot to a boil.

Reduce heat to low, cover, and simmer for 45 minutes until beef reaches an internal temperature of at least 160F and starts softening.

Add 1 lb chopped calabaza squash, 1 lb cubed yellow yam, 2 sliced carrots, 4 chopped scallions, 4 fresh thyme sprigs, 1 whole scotch bonnet pepper, and 1 tsp salt to the pot.

Simmer uncovered for 30 minutes until vegetables are tender and squash thickens the broth.

Remove thyme and scotch bonnet before serving.
