Ingredients

  • 3 lbs goat meat, cut into 2-inch pieces
  • 4 tbsp curry powder
  • 2 tbsp vegetable oil
  • 1 cup onions, chopped
  • 6 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 4 scallions, chopped
  • 2 tsp fresh thyme
  • 1 scotch bonnet pepper (optional)
  • 2 tsp salt
  • 1/2 tsp black pepper
  • 6 cups beef or goat stock
  • 2 lbs potatoes, cut into chunks
  • 1.5 cups coconut milk

Instructions

    Season 3 lbs goat meat cut into 2-inch pieces with 2 tsp salt and 1/2 tsp black pepper.

    Heat 2 tbsp vegetable oil in a large pot over medium-high heat. Add 4 tbsp curry powder and stir for 1 minute to toast.

    Add 1 cup chopped onions, 6 cloves minced garlic, 1 tbsp minced fresh ginger, and 4 chopped scallions. Sauté for 3 minutes until fragrant.

    Add the goat and stir well to coat with the curry mixture. Brown for 5 minutes.

    Pour in 6 cups beef or goat stock and add 2 tsp fresh thyme and 1 scotch bonnet pepper (optional).

    Bring to a boil, then reduce heat to low. Cover and simmer for 75 minutes until meat is tender.

    Add 2 lbs cut into chunks potatoes and 1.5 cups coconut milk. Simmer uncovered for 30 more minutes.
