Blackened Shrimp Salad
Juicy cajun-spiced shrimp seared to perfection served over crisp romaine lettuce, ripe avocado, and cherry tomatoes.
Ingredients
- 1 lb peeled and deveined raw shrimp, patted dry
- 2 tbsp blackening spice blend
- 1/4 cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 2 heads romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 red onion, thinly sliced

Toss 1 lb patted dry peeled and deveined raw shrimp with 2 tbsp blackening spice blend in a bowl until coated.

Whisk half of the 1/4 cup extra virgin olive oil with 2 tbsp fresh lemon juice to make dressing.

Heat the remaining extra virgin olive oil in a heavy skillet over high heat.

Add shrimp and cook for 2 to 3 minutes per side until charred and internal temperature reaches 120 degrees F.

Combine 2 heads chopped romaine lettuce, 1 cup halved cherry tomatoes, 1 diced avocado, and 1/2 thinly sliced red onion in a large bowl.

Top salad with cooked shrimp and drizzle with dressing.
