Caldo de Res
Mexican beef and vegetable soup loaded with tender beef, potatoes, corn, and zucchini. A comforting, rustic soup that's hearty enough for a full meal.
Ingredients
- 2.5 lbs beef chuck or stewing meat, cut into 1-inch cubes
- 12 cups beef broth
- 4 cups water
- 1 large yellow onion, quartered
- 6 cloves garlic, minced
- 2 large russet potato, cubed
- 1.5 medium zucchini, cut into chunks
- 2 cups frozen corn
- 2 carrot, cut into chunks
- 2 tbsp tomato paste
- 1 tsp ground cumin
- 2 bay leaf
- to taste salt
- to taste black pepper
- 1/4 cup fresh cilantro, chopped
- 1 fresh lime, cut into wedges

In a large pot, bring 12 cups beef broth and 4 cups water to a boil. Add 2.5 lbs cut into 1-inch cubes beef chuck or stewing meat, 1 large quartered yellow onion, 6 cloves minced garlic, 2 bay leaf, and 1 tsp ground cumin.

Reduce heat to low and simmer for 30 minutes until beef is partially tender.

Stir in 2 tbsp tomato paste and add 2 large cubed russet potato, 2 cut into chunks carrot, and 1.5 medium cut into chunks zucchini.

Simmer for another 15-20 minutes until vegetables are tender and beef is fully cooked through.

Add 2 cups frozen corn and cook for 5 more minutes.

Season to taste with salt and pepper. Stir in 1/4 cup chopped fresh cilantro.

Serve hot with 1 cut into wedges fresh lime for squeezing.
