Picadillo
Cuban-style ground beef hash with olives, capers, and warm spices, served over rice. A savory, comforting weeknight dinner.
Ingredients
- 1.5 lbs ground beef
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 4 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1.5 cups tomato sauce
- 1/2 cup green olives (pitted), sliced
- 1/4 cup capers (drained)
- 1/4 cup raisins
- 2 tsp tomato paste
- 1/2 cup beef broth
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped

Heat 2 tbsp olive oil in a large skillet over medium-high heat.

Add 1.5 lbs ground beef, breaking it apart with a spoon, and cook for 5-7 minutes until browned and cooked through (160°F internal temperature). Drain excess fat if needed.

Stir in 1 medium diced yellow onion and 4 cloves minced garlic, cooking for 2 minutes until fragrant.

Add 1 tsp ground cumin, 1/2 tsp dried oregano, and 2 tsp tomato paste, stirring to coat the meat. Cook for 1 minute.

Pour in 1.5 cups tomato sauce and 1/2 cup beef broth. Stir in 1/2 cup sliced green olives (pitted), 1/4 cup capers (drained), and 1/4 cup raisins.

Season with 1/2 tsp salt and 1/4 tsp black pepper. Simmer for 12-15 minutes until the sauce thickens.

Taste and adjust seasonings. Top with 2 tbsp chopped fresh cilantro and serve over rice.
