Huevos a la Divorciada
Mexican eggs served on crispy tortillas with a split personality: one side bathed in vibrant green salsa, the other in rich red salsa. A playful, visually stunning breakfast.
Ingredients
- 4 large eggs
- 4 corn tortillas
- 1/2 cup vegetable oil
- 1 cup fresh green salsa (salsa verde)
- 1 cup red salsa (salsa roja)
- 1/2 cup queso fresco, crumbled
- 1/4 cup sour cream
- 2 tbsp fresh cilantro, chopped

- to taste black pepper

Heat 1/2 cup vegetable oil in a skillet over medium-high heat. Fry 4 corn tortillas for 2-3 minutes per side until crispy and golden. Drain on paper towels and place on serving plates.

Fry 4 large eggs in the same skillet to your preference (sunny-side up works best, internal temp 160-180 degrees F). Season with salt and pepper.

Place a fried egg on top of each crispy tortilla.

Carefully pour 1 cup fresh green salsa (salsa verde) on one half of each egg and 1 cup red salsa (salsa roja) on the other half, creating a dramatic split presentation.

Top with 1/2 cup crumbled queso fresco, a dollop of 1/4 cup sour cream, and 2 tbsp chopped fresh cilantro.
