Enfrijoladas
Soft tortillas dipped in savory black bean sauce and layered with cheese, topped with a fried egg. A rustic Mexican comfort dish that's creamy, rich, and utterly satisfying.
Ingredients
- 2 cans canned black beans, drained
- 1/2 cup vegetable broth
- 4 cloves garlic, minced
- 1/2 tsp ground cumin
- to taste salt
- 8 corn tortillas
- 1 cup mozzarella cheese, shredded
- 4 large eggs
- 3 tbsp vegetable oil
- 1/2 small red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup sour cream

In a skillet, heat 2 cans drained canned black beans with 1/2 cup vegetable broth, 4 cloves minced garlic, 1/2 tsp ground cumin, and salt. Mash some of the beans with the back of a spoon to thicken the sauce. Simmer for 5 minutes. Transfer to a shallow bowl.

Dip each 8 corn tortillas into the bean sauce to lightly coat both sides.

Arrange dipped tortillas on a plate, layering with 1 cup shredded mozzarella cheese between each tortilla.

In a separate skillet, heat 3 tbsp vegetable oil and fry 4 large eggs to your preference (internal temp 160-180 degrees F). Season with salt.

Top the stacked tortillas with a fried egg, more bean sauce, and a dollop of 1/2 cup sour cream.

Garnish with 1/2 small thinly sliced red onion and 1/4 cup chopped fresh cilantro. Serve immediately.
