Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 2 tsp balsamic vinegar
  • 4 sprigs fresh thyme sprigs

Instructions

    Peel and slice 4 large thinly sliced yellow onions into thin half-rings, about 1/8 inch thick.

    Heat 2 tbsp unsalted butter and 2 tbsp olive oil in a large heavy-bottomed skillet over medium heat until butter melts.

    Add the onions, 1/2 tsp salt, and 1/2 tsp sugar. Toss to coat and add 4 sprigs fresh thyme sprigs.

    Cook over medium-low to low heat, stirring every 5-10 minutes, for 35-45 minutes until onions are deeply golden and jammy. Adjust heat to prevent burning.

    If onions stick, add a splash of water and scrape up the browned bits from the pan.

    Remove thyme sprigs and stir in 2 tsp balsamic vinegar. Cook 1-2 more minutes, taste and adjust salt. Serve warm.
