Carrot Kosambari
A refreshing South Indian salad featuring grated carrots and soaked yellow moong dal tossed with fresh coconut, lemon, and a mustard seed tempering.
Ingredients
- 1/4 cup split yellow moong dal
- 2 cups carrots, grated
- 2 tbsp grated fresh coconut
- 1 green chili, finely chopped
- 2 tbsp fresh cilantro, chopped
- 2 tsp lemon juice
- 1/2 tsp salt
- 1 tsp neutral cooking oil
- 1/2 tsp mustard seeds
- 8 fresh curry leaves

Soak 1/4 cup split yellow moong dal in warm water for 30 minutes, then drain thoroughly.

In a large bowl, combine the soaked 1/4 cup split yellow moong dal, 2 cups grated carrots, 2 tbsp grated fresh coconut, 1 finely chopped green chili, 2 tbsp chopped fresh cilantro, 2 tsp lemon juice, and 1/2 tsp salt.

Heat 1 tsp neutral cooking oil in a small skillet over medium heat.

Add 1/2 tsp mustard seeds and let them pop, then add 8 fresh curry leaves and fry for 5 seconds.

Pour the hot tempering over the salad mix and toss well before serving.
