Champuz
A warm, aromatic Peruvian fruit drink featuring cracked corn cooked in spiced unrefined cane sugar syrup with fresh pineapple and quince.
Ingredients
- 1 cup cracked white corn, soaked
- 6 cups water
- 8 oz chancaca sugar, chopped
- 2 cinnamon sticks
- 4 whole cloves
- 1 cup pineapple, diced
- 1 cup quince, diced
- 2 tbsp fresh lemon juice

In a large pot, combine 6 cups water and overnight-soaked 1 cup soaked cracked white corn over medium heat.

Add 8 oz chopped chancaca sugar, 2 cinnamon sticks, and 4 whole cloves, then bring to a gentle boil.

Reduce heat to low and simmer for 30 minutes until the corn is tender and the mixture thickens slightly.

Stir in 1 cup diced pineapple and 1 cup diced quince, cooking for another 10 minutes until the fruit softens.

Remove from heat, discard the cinnamon sticks and whole cloves, and stir in 2 tbsp fresh lemon juice before serving warm.
