Chicharrón de Puerco
Crispy pork belly chunks simmered in garlic and spice-infused water until tender then fried in their own rendered fat.
Ingredients
- 2 lbs pork belly, cut into cubes
- 2 cups water
- 4 garlic cloves, smashed
- 2 tsp fine sea salt
- 1/2 tsp ground cumin

Combine 2 lbs cut into cubes pork belly, 2 cups water, 4 smashed garlic cloves, 2 tsp fine sea salt, and 1/2 tsp ground cumin in a heavy skillet over medium-high heat.

Bring to a boil, then reduce heat to medium and simmer until the liquid evaporates completely, about 30 minutes.

Fry the pork in its own rendered fat over medium heat, stirring occasionally, until deeply browned and crisp, about 10 to 15 minutes.

Confirm the pork reaches an internal temperature of at least 145°F before removing it with a slotted spoon to drain on paper towels.
