Chupe de Zapallo
A comforting Peruvian squash soup filled with sweet corn, rice, fresh cheese, and poached eggs in a savory aji amarillo broth.
Ingredients
- 3 cups kabocha squash, diced
- 2 tbsp vegetable oil
- 1 cup red onion, diced
- 4 garlic cloves, minced
- 2 tbsp aji amarillo paste
- 4 cups vegetable broth
- 1/2 cup white rice
- 1 cup corn kernels
- 1/2 cup green peas
- 1 cup queso fresco, cubed
- 1/2 cup evaporated milk
- 4 eggs
- 1 tsp dried oregano

Heat 2 tbsp vegetable oil in a pot over medium heat.

Add 1 cup diced red onion and 4 minced garlic cloves, sautéing for 5 minutes until soft.

Stir in 2 tbsp aji amarillo paste and cook for 2 minutes until fragrant.

Add 3 cups diced kabocha squash, 4 cups vegetable broth, and 1/2 cup white rice.

Simmer for 15 minutes until the rice and squash are tender.

Stir in 1 cup corn kernels and 1/2 cup green peas, cooking for 5 minutes.

Turn heat to low, stir in 1/2 cup evaporated milk and 1 cup cubed queso fresco.

Gently crack 4 eggs directly into the soup, cooking for 3 minutes until whites are set.
