Chanko Nabe
A deeply comforting Japanese hot pot filled with chicken meatballs, fresh vegetables, and tofu simmered in savory dashi broth.
Ingredients
- 1 lb ground chicken
- 1 tbsp fresh ginger, grated
- 4 scallions, sliced
- 6 cups dashi stock
- 3 tbsp soy sauce
- 3 tbsp mirin
- 4 cups Napa cabbage, chopped
- 14 oz medium-firm tofu, cubed
- 8 shiitake mushrooms, stemmed

Mix 1 lb ground chicken, 1 tbsp grated fresh ginger, and half of the 4 sliced scallions together in a bowl.

Bring 6 cups dashi stock, 3 tbsp soy sauce, and 3 tbsp mirin to a boil in a large pot, then reduce heat to a simmer.

Scoop spoonfuls of the chicken mixture into the broth and cook until meatballs reach an internal temperature of 165°F, about 8 minutes.

Add 4 cups chopped Napa cabbage, 14 oz cubed medium-firm tofu, and 8 stemmed shiitake mushrooms to the pot and simmer until cabbage leaves soften, about 5 minutes.

Garnish with remaining 4 sliced scallions and serve immediately.
