Charred Beet and Walnut Salad
A trendy modern Russian salad featuring roasted beets with caramelized edges, toasted walnuts, and a tangy horseradish vinaigrette. Earthy, nutty, and sophisticated.
Ingredients
- 2 lbs beets (fresh), peeled and cut into wedges
- 1/2 cup walnuts, toasted and halved
- 3 tbsp red wine vinegar
- 3 tbsp olive oil
- 2 tsp fresh horseradish (grated) or prepared horseradish
- 1 tsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp fresh thyme (optional)
- 2 cups arugula (optional for serving)

Preheat oven to 425°F.

Toss 2 lbs peeled and cut into wedges beets (fresh) with 1 tablespoon of 3 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper.

Spread on a baking sheet and roast for 30-35 minutes, stirring halfway through, until beets are tender and edges are caramelized and charred.

While beets roast, toast 1/2 cup toasted and halved walnuts in a dry skillet over medium heat for 2-3 minutes, stirring occasionally, until fragrant.

In a small bowl, whisk together 3 tbsp red wine vinegar, remaining oil, 2 tsp fresh horseradish (grated) or prepared horseradish, 1 tsp Dijon mustard, 1/2 tsp fresh thyme (optional), salt, and pepper.

Remove beets from oven and let cool slightly.

Arrange beets on a plate and drizzle with the horseradish vinaigrette.

Scatter walnuts over the top.

Add 2 cups arugula (optional for serving) if desired.
