Cheese Puff Pastry
A classic New Jersey bakery style cheese puff featuring flaky, honeycombed puff pastry wrapped around a dense, sweet, and tangy cream cheese filling inside a square dome.
Ingredients
- 1 puff pastry sheets, thawed
- 8 oz cream cheese, softened
- 1/3 cup granulated sugar
- 1 egg yolk
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 egg, beaten

Preheat oven to 400 degrees F and line a baking sheet with parchment paper.

In a bowl, beat 8 oz softened cream cheese, 1/3 cup granulated sugar, 1 egg yolk, 1 tbsp cornstarch, 1 tsp lemon juice, and 1 tsp vanilla extract until smooth and very thick.

Unroll 1 thawed puff pastry sheets on a light work surface and cut into eight equal squares.

Place four pastry squares on the baking sheet and spoon a thick mound of cheese mixture into the center of each, leaving a half inch border.

Brush border with 1 beaten egg, top each with a remaining pastry square, and press edges securely to seal into enclosed square domes.

Brush tops of pastry domes with 1 beaten egg.

Bake for 20 to 22 minutes until deeply golden brown, puffed, and hollow on top.
