Chewy Molasses Oatmeal Cookies
These cookies are a delightful blend of chewy and cake-like, featuring a prominent oat texture and rich molasses flavor, subtly spiced with cinnamon. They spread just slightly during baking, maintaining a satisfyingly thick profile.
Ingredients
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1 cup unsalted butter, softened
- 1 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 2 large egg
- 1/4 cup molasses
- 2 tsp vanilla extract
- 3 cups old-fashioned rolled oats
- 1 cup raisins
Instructions
-
1
Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or leave ungreased.
-
2
In a medium bowl, whisk together 2 cups all-purpose flour, 1 tsp baking soda, 1/2 tsp salt, and 1 tsp ground cinnamon. Set aside.
-
3
In a large bowl, using an electric mixer, cream together 1 cup softened unsalted butter, 1 cup packed light brown sugar, and 1/2 cup granulated sugar until light and fluffy, about 2-3 minutes.
-
4
Beat in the 2 large egg until well combined, then stir in the 1/4 cup molasses and 2 tsp vanilla extract.
-
5
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
-
6
Fold in the 3 cups old-fashioned rolled oats and, if using, 1 cup raisins until evenly distributed.
-
7
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
-
8
Bake for 10-12 minutes, or until the edges are golden brown and the centers are still slightly soft. Do not overbake for a chewier cookie.
-
9
Let cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
