Ensalada de Olluquito
A traditional cold Andean salad featuring tender julienned olluco, Peruvian corn, diced cheese, and a zesty lime dressing.
Ingredients
- 1 lb fresh or frozen olluco, julienned
- 1 cup Peruvian choclo corn, cooked
- 1 cup queso fresco, cubed
- 1/2 cup red onion, thinly sliced
- 2 tbsp fresh ají amarillo chili, minced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp fresh lime juice
- 2 tbsp extra virgin olive oil
- 1 tsp salt

Bring a pot of salted water to a boil, add 1 lb julienned fresh or frozen olluco, and cook for 8 to 10 minutes until tender.

Drain the olluco thoroughly and let cool completely in a large bowl.

Add 1 cup cooked Peruvian choclo corn, 1 cup cubed queso fresco, 1/2 cup thinly sliced red onion, 2 tbsp minced fresh ají amarillo chili, and 1/4 cup chopped fresh cilantro to the bowl.

In a small bowl, whisk together 3 tbsp fresh lime juice, 2 tbsp extra virgin olive oil, and 1 tsp salt.

Pour dressing over the salad mixture and toss gently before serving.
