Chicken Egg Roll in a Bowl
A quick and flavorful dish with seasoned ground chicken, crisp coleslaw mix, and an aromatic sesame-soy sauce.
Ingredients
- 1 lb ground chicken
- 1 tbsp olive oil
- 1/4 tsp salt and ground pepper
- 1/4 cup low-sodium soy sauce
- 1 tsp sesame oil
- 2 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1 tsp roasted red chili paste
- 4 cups coleslaw mix
- 1/4 cup green onions, sliced
- 1 tsp sesame seeds

In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add 1 lb ground chicken to the pan, season with 1/4 tsp salt and ground pepper, and cook for about 6 minutes until browned and reaching an internal temperature of 165°F, stirring to crumble.

While the chicken is cooking, whisk together 1/4 cup low-sodium soy sauce, 1 tsp sesame oil, 2 minced garlic cloves, 1 tbsp grated fresh ginger, and 1 tsp roasted red chili paste in a small bowl.

Once the chicken is cooked through, add 4 cups coleslaw mix to the skillet and stir until softened. Pour in the sauce mixture, stirring well until everything is completely coated, and cook for about 2 minutes until thickened.

Garnish with 1/4 cup sliced green onions and 1 tsp sesame seeds before serving.
