Laksa
Rich Malaysian noodle soup with creamy coconut curry broth, shrimp, tofu, and fresh herbs - a complex, aromatic favorite.
Ingredients
- 12 oz rice noodles
- 12 oz large shrimp, peeled and deveined
- 12 oz firm tofu, cubed
- 6 cups chicken broth
- 1 cup coconut milk
- 4 tbsp laksa paste (store-bought)
- 1 lemongrass stalks, bruised
- 2 tsp fish sauce
- 4 tbsp fresh lime juice
- 2 cups fresh bean sprouts
- 1/2 cup fresh cilantro, chopped
- 4 green onions, sliced
- 1/2 cucumber, diced

Bring a pot of water to boil and cook 12 oz rice noodles according to package directions. Drain and set aside.

In a large pot, heat 6 cups chicken broth over medium heat.

Stir in 4 tbsp laksa paste (store-bought) until fully combined.

Add 1 bruised lemongrass stalks and bring to a simmer.

Add 12 oz large shrimp, peeled and deveined and 12 oz cubed firm tofu to the broth and cook for 4-5 minutes until shrimp are pink and cooked through.

Stir in 1 cup coconut milk, 2 tsp fish sauce, and 4 tbsp fresh lime juice.

Simmer for 5 minutes. Taste and adjust seasonings as needed.

Remove lemongrass from the pot.

Divide cooked noodles among serving bowls.

Ladle the curry broth with shrimp and tofu over the noodles.

Garnish with 2 cups fresh bean sprouts, 1/2 cup chopped fresh cilantro, 4 sliced green onions, and 1/2 diced cucumber.
