Chorba Ruz
A classic North African soup featuring tender spiced lamb, rice, and fresh herbs in a rich tomato broth.
Ingredients
- 2 tbsp olive oil
- 1 lb lamb shoulder, diced
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 3 tbsp tomato paste
- 14 oz crushed tomatoes
- 1 tsp ground coriander
- 1/2 tsp ground caraway
- 1/4 tsp ground cinnamon
- 6 cups beef broth
- 1/2 cup long-grain white rice, rinsed
- 1/2 cup fresh cilantro, chopped
- 2 tbsp fresh mint, chopped

Heat 2 tbsp olive oil in a large pot over medium heat.

Add 1 lb diced lamb shoulder and brown on all sides for 6 minutes, ensuring internal temperature reaches 160°F.

Stir in 1 diced yellow onion and 4 minced garlic cloves, cooking for 4 minutes until softened.

Mix in 3 tbsp tomato paste, 1 tsp ground coriander, 1/2 tsp ground caraway, and 1/4 tsp ground cinnamon, frying for 1 minute until fragrant.

Pour in 14 oz crushed tomatoes and 6 cups beef broth, bringing the liquid to a simmer.

Reduce heat, cover, and simmer for 20 minutes until the meat is tender.

Stir in 1/2 cup rinsed long-grain white rice and cook uncovered for 15 minutes until the rice is tender.

Turn off heat and stir in 1/2 cup chopped fresh cilantro and 2 tbsp chopped fresh mint before serving.
