Cornbread Chili
A rich beef and kidney bean chili topped with a tender, golden cornmeal crust baked directly in one skillet.
Ingredients
- 1.5 lbs lean ground beef
- 1 cup yellow onion, diced
- 2 tbsp chili powder
- 2 cans canned diced tomatoes
- 2 cans canned dark red kidney beans, drained
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup unsalted butter, melted
- 1 cup whole milk
- 1 large egg, beaten

Preheat oven to 400 degrees F. In an oven-safe skillet, brown 1.5 lbs lean ground beef and 1 cup diced yellow onion over medium heat until meat reaches 160 degrees F.

Stir in 2 tbsp chili powder, 2 cans canned diced tomatoes, and 2 cans drained canned dark red kidney beans, then simmer for 10 minutes.

Whisk together 1 cup yellow cornmeal, 1 cup all-purpose flour, 1/4 cup melted unsalted butter, 1 cup whole milk, and 1 beaten large egg in a bowl until smooth.

Spread the cornbread batter evenly over the simmered chili in the skillet.
