Creole Seafood Gumbo
A rich, aromatic soup featuring a dark roux, fresh holy trinity vegetables, tomatoes, and tender seafood simmered in a seasoned broth.
Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 yellow onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 14 oz canned diced tomatoes
- 6 cups seafood stock
- 2 cups fresh okra, sliced
- 2 tsp Creole seasoning
- 1 lb raw shrimp, peeled
- 1/2 lb lump crabmeat, picked over

Whisk 1/2 cup vegetable oil and 1/2 cup all-purpose flour in a heavy pot over medium heat, stirring constantly for 20 to 25 minutes until dark brown.

Add 1 diced yellow onion, 1 diced green bell pepper, 2 diced celery stalks, and 4 minced garlic cloves to the pot, cooking for 5 minutes until soft.

Stir in 6 cups seafood stock, 14 oz canned diced tomatoes, 2 cups sliced fresh okra, and 2 tsp Creole seasoning, then simmer uncovered for 30 minutes.

Add 1 lb peeled raw shrimp and 1/2 lb picked over lump crabmeat, simmer for 5 minutes until shrimp reaches an internal temperature of 145F and turns opaque.
