Cucumber Lime Agua Fresca

Ingredients

  • 1 large English cucumber (or 2 Persian cucumbers), peeled, roughly chopped
  • 4 cups cold water
  • 1/4 cup fresh lime juice (about 3 limes)
  • 1/4 cup granulated sugar
  • 1/4 cup water (for simple syrup)
  • 1/4 tsp fine salt
  • 4 cups ice cubes
  • 4 slices lime slices (for garnish)

Instructions

    Make a simple syrup: combine 1/4 cup granulated sugar and 1/4 cup water (for simple syrup) in a small bowl or saucepan. Stir or heat briefly until the sugar is fully dissolved. Let cool.

    Add 1 large peeled, roughly chopped English cucumber (or 2 Persian cucumbers) and half the cold water to a blender. Blend on high for 30 seconds until completely smooth.

    Strain through a fine-mesh strainer into a large pitcher, pressing on the solids to extract all the liquid. Discard the solids.

    Stir in the remaining cold water (4 cups total), 1/4 cup fresh lime juice (about 3 limes), the cooled simple syrup, and 1/4 tsp fine salt. Taste and adjust sweetness or tartness.

    Fill four glasses with 4 cups ice cubes, pour the agua fresca over the ice, and garnish each glass with a lime slices (for garnish). Serve immediately.
