Air Fryer Chicken Taquitos
Shredded seasoned chicken and melted cheese rolled tight in corn tortillas, then air-fried until shattering-crispy — great for a crowd or a quick weeknight snack.
Ingredients
- 2 cups cooked shredded chicken (rotisserie works great)
- 12 corn tortillas (6-inch)
- 1 cup shredded Monterey Jack cheese
- 4 oz cream cheese, softened
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- 2 tsp fresh lime juice
- as needed cooking spray
- 1/3 cup sour cream (for serving)
- 1/2 cup salsa (for serving)
- 1 avocado, sliced or mashed

In a large bowl, mix 2 cups cooked shredded chicken (rotisserie works great), 1 cup shredded Monterey Jack cheese, 4 oz softened cream cheese, 1 tsp ground cumin, 1 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp kosher salt, and 2 tsp fresh lime juice until evenly combined.

Warm 12 corn tortillas (6-inch) in a damp paper towel in the microwave for 30-45 seconds until pliable — this prevents them from cracking when you roll them.

Place about 2-3 tablespoons of filling in a line down the center of each tortilla. Roll tightly and place seam-side down. Secure with a toothpick if needed.

Preheat your air fryer to 400°F for 3 minutes. Arrange taquitos seam-side down in a single layer and spray all over with cooking spray.

Air fry at 400°F for 8-10 minutes until golden brown and crispy, flipping halfway through. Work in batches if needed.

Serve immediately with 1/3 cup sour cream (for serving), 1/2 cup salsa (for serving), and 1 sliced or mashed avocado.
