Dolmas
Mediterranean grape leaves stuffed with fragrant rice, herbs, and spices, then rolled and steamed. A classic Middle Eastern and Mediterranean appetizer that's light, fresh, and delicious.
Ingredients
- 1 jar grape leaves (jarred), rinsed
- 1 cup white rice
- 1/2 yellow onion, finely diced
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh mint, chopped
- 1 tbsp fresh parsley, chopped
- 3 tbsp olive oil
- 1/4 cup fresh lemon juice
- 3 cups vegetable broth
- 1/4 tsp salt
- 1/8 tsp black pepper

Rinse 1 jar rinsed grape leaves (jarred) well under cold water to remove excess brine.

In a bowl, combine 1 cup white rice, 1/2 finely diced yellow onion, 1 tbsp chopped fresh dill, 1 tbsp chopped fresh mint, 1 tbsp chopped fresh parsley, 3 tbsp olive oil, half the 1/4 cup fresh lemon juice, 1/4 tsp salt, and 1/8 tsp black pepper.

Place a grape leaf shiny side down on a flat surface. Add 1 tbsp of filling near the bottom of the leaf.

Fold the bottom over the filling, fold in the sides, and roll tightly upward like a cigar. Repeat with remaining grape leaves and filling.

Arrange rolls seam-side down in a pot. Pour 3 cups vegetable broth and remaining lemon juice over the rolls.

Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes until the rice is tender.

Serve warm or at room temperature.
